Coming Attractions: Is Creve Coeur Getting a Potbelly?

We're tracking new and expanding businesses in the Creve Coeur area. Send us your news!

Long after closed up shop on Olive Boulevard and relocated to a new storefront on New Ballas Road under the banner, readers have been checking in with Patch to find out what will happen to the CityPlace property. Now we have a better idea.

Mike Walters, the Franchise Zone manager for Potbelly Sandwich Works, a chain of more than 200 restaurants in 14 states and the District of Columbia, said the firm is close to signing a deal with a franchise owner to launch the first Missouri location at 11615 Olive Boulevard.

The franchise owner would be Fenton-based Todd Stimson, President of Capital Solutions Management Inc. Stimson Tuesday filed paperwork with the city of Creve Coeur for a 2400 square foot restaurant which would seat 42 people indoors and 16 outside seasonally. He told Patch he only has plans for a quarter of the available space, the rest of which is being subdivided.

The menu features toasted sandwiches, salads, soups and other items, also available for delivery. Walters said the franchise also features lives music and that half of the restaurant's decor would represent the Creve Coeur area. Stimson said he is excited about the prospects for the eclectic restaurant, calling it "a cool concept for St. Louis."

Stimson plans to have a 7-8 full time employees and a part-time staff of between 15-20 people.

A site plan must still go before city planning and zoning officials and city council for review, with a likely public hearing scheduded for P&Z on February 21.

Seating for 42 is not enough. Potbelly is really popular in Chicago area. When I ate in the Deerfield store, every sandwich on the menu was only $3.79/ including PB&J-- today the price is $4. Always busy and hard to find a table in the Glenview store too! Loved the classical guitar.
